lets taco bout it

Tacos are so fun because you can put anything you want in them. It's a great easy way to get a balanced meal because you can get whole grain, protein, and plenty of veggies. And that's what we like!!!!

recipe 1

ingredients: 

corn tortillas 

1/4 cup dry quinoa 

1/2 cup chopped red cabbage

1/2 cup chopped red onion

1/4 cup black beans

chopped lettuce

avocado 

tahini

paprika

cayenne (if you like spice)

Himalayan pink salt 

directions: 

cook quinoa, rinse beans

put veggies in a pan and cook with paprika, add quinoa and beans after veggies (cabbage, onion) are properly cooked. add flax oil if necessary. Mix nut cheese in if you're into that. 

Put that big ole mess into a couple tortillas (or a burrito). Top with chopped lettuce (or spinach) and avocado. drizzle with tahini, sprinkle with nutritional yeast

recipe 2 

ingredients: 

whole grain tortillas (Ezekiel) 

curly kale

cooked beets

tempeh

tomatoes

onion

mushrooms

nut cheese 

tahini

directions: 

preheat oven to 350 degrees

Bake tempeh for 10 minutes 

cook kale for 6 minutes until crispy

put onions and mushrooms in a suace pan with apple cider vinegar. add tomatoes at the end. Then add tempeh. 

Sprinkle mix with spices you like

mix tahini, nutritional yeast, apple cider vinegar, and water to make a dressing

cook tortilla on skillet for a hot sec
