this puppy is quick, easy, filling, and full of nutrients!!!!

just throw together everything you’ve got in your fridge at the end of the week :)

 

ingredients

  • spinach/kale/any salad green

  • tofu, extra firm, organic (v important to get organic tofu!!! see why)

  • coconut sugar

  • coconut aminos

  • cooking oil (I recommend flax oil)

  • tomatoes

  • VEGGIE IDEAS: broccolini, mushrooms, onions, shredded carrots

  • black beans (optional)

  • brown rice

dressing

  • tahini

  • apple cider vinegar


Directions

  1. get cracking in your tofu:

    1. plop it out of the weird containers, drain out the water, and chop into cubes

    2. toss in a large bowl with a couple tablespoons of coconut sugar, coconut aminos, and cooking oil of your choice. add some vinegar if you want some extra ZANG

    3. put in a big ole skillet, toss it around, squirt some honey on there if you feel like it, and cook cook cook for like until it gets crispy

    4. easy for it to burn, so make sure your watching it and moving it around

  2. steam your broccolini (include mushrooms and onions if you want)

    1. chop into little guys

    2. put the tofu in a bowl, then cook on the same skillet so you can get some of the flavor flave

    3. put the little topper to keep the steam in, add some extra oil or water

  3. put it all together

    1. chop up your leaves

    2. add some rice

    3. add some chopped tomatoes

    4. and some rinsed black beans

    5. add your tofu and steamed veggies

  4. top with tahini and BABAMBOOM
